By now, many of the women in our (awesome) Healthful Pursuit community would agree that no matter how clean our keto diets are, we need a little boost of nutrients from supplementation. I’m not talking about oodles of pills and concoctions, just a couple of power items to really make a difference. 3-Ingredient truffles low-carb, keto made with nourishing ingredients, greens powder and healthy fats. Dairy-free, grain-free, sugar-free and awesome!
Ingredients
  • 1 ½ cups (140 grams) unsweetened medium-shredded coconut
  • 2 tablespoons (20 grams) greens+ O powder, vanilla flavor *see note
  • ½ cup extra-virgin coconut oil, at room temperature
To make cacao truffles, add:

  • Hemp hearts
  • Chia seeds
  • Unsweetened medium-shredded coconut
Instructions
  1. Line a small baking sheet with parchment paper and set aside. If you’re going to add toppings to your truffles, place a couple of tablespoons of topping ingredients in separate small bowls and set aside.
  2. Add coconut and greens powder to the bowl of your stand mixer or food processor with dough blade, or a large bowl and use a handheld mixer. Mix until coconut is covered in greens, then add coconut oil.
  3. Mix until everything is combined. The mixture should hold together nicely.
  4. Scoop dough, about 1 tablespoon at a time, into the palm of your hand. Roll lightly and place on prepared baking sheet. Repeat with remaining dough. Mixture should make 14 truffles.
  5. Once completed, transfer baking sheet to the fridge to cool for 15 minutes.
  6. Store in an air-tight container in the fridge for 5 days, or freezer for 2 months.
Notes
Greens powder: Greens+O is lightly sweetened with stevia and the flavor I used, vanilla, adds good flavor to the truffles. If you use a different greens powder for this recipe, make sure it's one that you really love as the flavor will come through on this! Also, there is a touch of grain in Greens+O however, because of the fermentation, I find that it doesn't affect me whatsoever. If you can't find a greens powder that works for you, feel free to replace the greens powder with 10 drops of stevia and 2 teaspoons of matcha powder or an equal amount (20 grams) or protein powder.

Various flavors: if you want to do a half-batch of chocolate like I did, separate the dough in half and add 2 tablespoons of cacao powder to the half, mix to combine, then follow the instructions.

The dough should hold together, lightly and look like this picture below. You don’t need to roll the keto balls firmly. Just toss between your fingers until a ball is shaped, then more on to the remaining batter.

My favorite thing about creating this recipe was how soft my hands were after! So much keto-tastic coconut oil, all up in my fingers and cuticals.

  2. Hi Leanne,
    I just made these fat bombs, however mine came out very runny. I included the cacao powder as an additional option. I used Vitamix dry container to mix dry ingrediants and wet container to mix dry with coconut oil. Any thoughts as to what happened? Thanks for your time! Love your website, recipes and podcast!

    • Hey, Allie! I’m sorry the recipe didn’t work out for you. A Vitamix will heat as it blends, so perhaps it melted the coconut oil too much. These work best when using room temperature coconut oil.

  3. Where did you find the vanilla-flavoured Greens+O in Calgary? Community Natural Foods only had natural and acai-mango. Can I just add vanilla extract to the natural flavour?

    • Hi Alison! It doesn’t taste like matcha… it’s a vanilla flavored greens powder. Tastes like… vanilla (and heaven!)

    Great recipe, but I have two comments.
    1) Your website is still very slow. Is it all the advertisements? Back in the day…your site operated a little better :(
    2) A LOT of the Greens+ products are NOT certified gluten-free. Be careful!

    • I just looked into this because I am on a gluten free diet and I switch between greens+ products. I asked Genuine Health on their live chat and they told me that the original greens+ formula tests under 20ppm but cannot be called gluten free because it contains wheatgrass and barley grass. They said that Health Canada considers 20ppm to be gluten free unless the product contains known gluten ingredients (it’s a bit confusing). I don’t have celiac disease so traces of gluten are ok with me but I think I will stick to greens+ O just to be safe as they said it tests at zero gluten…and I like it :)
