A new year has begun!

It’s my birthday today which makes it a perfect time to look back on all the things I’ve accomplished in the last 12 months. I’m ready to close this chapter and set my sights on what I’d like to see unfold in my 27th year.

In the last 12 months I’ve left the corporate world to pursue my calling, moved across the country, spent a week in New York studying photography, hired a vocal coach, wrote my first book, met Danielle LaPorte, worked on some crazy self-love practices, completed two 30 day yoga challenges, learned how to sit in silence ALL day and read 16 books. Boom.

27. I want to… write another book, find a place to call home, meditate, read more, meet awesome women, get married, work with kids, deepen my faith, travel far, dance, sing, and draw pretty things.

I’m going to continue to celebrate the food I eat, and worship the amazing life that I have – ups, downs, smiles, tears, all of it.

Naturally sweet raspberry salad dressing that's oil-free, refined sugar-free and dairy-free.
Ingredients
  • 6 ounces (170 grams) fresh raspberries
  • ½ cup homemade apple juice
  • 2 tablespoons red wine vinegar
  • 1 tablespoon Dijon mustard
  • 1 tablespoon honey or coconut nectar
  • 1 shallot, finely diced
Instructions
  1. Add raspberries, juice, vinegar, mustard and honey to the jug of your high powered blender and blend until smooth, about 2 minutes.
  2. Pour into a container and add diced shallot.
  3. Cover and allow to cool in the refrigerator for a couple of hours. Use on fresh veggies, salads or as a dip.
  4. Makes approximately 1 cup, 8 servings (2 tablespoons per serving)

Lemon Garlic Oil-free Salad Dressing

Deeply lemony salad dressing with a punch of garlic!
Ingredients
  • ¼ cup fresh lemon juice
  • 1 tablespoon white balsamic vinegar
  • 1 tablespoon Dijon mustard
  • 1 tablespoon honey or coconut nectar
  • 1 clove garlic
Instructions
  1. Add all ingredients to the jug of your high powered blender and blend until smooth, about 1 minute.
  2. Pour into a container.
  3. Cover and allow to cool in the refrigerator for a couple of hours. Use on fresh veggies, salads or as a dip.
  4. This salad dressing is a bit liquidy so does best as a marinade or salad dressing for shaved vegetable salads.
  5. Makes ½ cup, 4 servings, 2 tablespoons per serving

And before all of this goodness happens, Kevin has told me that I have a day planned at the spa today! So, off I go to soak in my reflective day and meld into the weekend with grace and ease.

    • Hi Josie – thank you for the birthday wishes! It seems I have a lot to celebrate every year (as does everyone) LOTS of struggles this year, but I always seem to come out on top – provided I have a good attitude about it all. Have a fabulous weekend :)

    • White balsamic is yum. So good. I’m sure you could use whatever vinegar you have… I just didn’t use the dark stuff because I wanted the bright colors of the dressing to shine through!

  2. Happy birthday my dear!!! You have indeed grown SO much this year and accomplished some pretty awesome things. I know 27 will be just as great for you. As for goals, I tend to set mine at the beginning of the year and work on them year-round, but birthdays are just as good a time to make new ones! Have a wonderful fabulous day!

  3. Oh my god happy birthday! You kept that nice and secret :) A day at the spa sounds perfect! I just turned 25 a couple of weeks back. I try not to reflect too much to be honest as I’m not really a big birthday fan; I like to be treated rather than set expectations or new goals for myself. Though I will admit I like your ones…especially bathing in that salad dressing! Divine!

    • Bathing in salad dressing is where it’s at! I don’t know how Kevin goes without dressing on his salads… weird! And… happy belated birthday?!

  4. Happy Birthday Leanne! I don’t set goals on my birthday I do them around new years, but I like the idea of the birthday goal setting. My birthday falls at the beginning of April so it would be nice to set goals from spring to spring instead of starting mid winter. I generally will try to set year long goals but end up going with seasonal goals, being in Canada they are good markers of whats to come.

    My spring goals are to get running! I have been training our 1.5 year old dog to run with me because she will dig out of the backyard if she doesn’t get enough exercise :S!! Her excitement when I grab the leash is too hard to deny so 1 have been walking every day with both my dogs and running with the athletic one every other day and I have been getting better and better at running.

    My goals also include going to CSNN in September, get moving on being a part time Zumba instructor, and be stronger around food and make choices that are for me, not just eating everything around me even when I know I wont feel good and it takes me further from my goal.

  5. Happy Birthday Leanne!! It is so amazing to read this and see all you have accomplished in the last year, way to go!! My birthday is on Monday and I will also be 27 so I can certainly relate and have also been doing lots of reflecting lately. This weekend I’ve decided to get an early start to my 27th year by registering for the Holistic Nutrition course at CSNN. You have inspired me so much with your positive attitude towards so much in life, your incredible outlook on healthy foods, your beautiful recipes and your willingness (although scary) to jump into something new! I have been struggling for the last 2 years to find my calling and after discovering your blog a year and a half ago I know what I need to do! I can’t wait to start this fantastic program and embrace year 27 the way you are!

  6. Happy birthday! I’m generally not a fan of traditional salad dressing, opting instead for hummus/avocado/mustard or other condiments, but these dressings sound so refreshing and light! And they’re beautiful, too!

    • Hi Christine – I think the raspberry one should last about 4 days. I made mine on Tuesday and I’ll be finishing it up today. The lemon one will last a bit longer, maybe a week or so?

  12. Love the salad dressing recipes. Being a cancer survivor (estrogen positive) I have gone back to being a vegan for the past 2 years. I was a vegan in the 90’s for about 6 years but slipped back into the SAD until my diagnoses. Now I can’t use soy products. I will be looking forward to trying your recipes.     I don’t set intentions at New Year’s and choose instead to do them on my birthday, which falls right around the summer solstice. I find the energy more auspicious at that time, and I also mentally try to shine the light of the longest days onto the areas of my life that need illuminating.
