You’ve told me that some of the keto recipes I’ve shared with you use some  ingredients that you don’t have access to. So, I’ve simplified it today. You should have access to every single ingredient for these keto and grain-free tortillas, including all of the keto sauces, keto taco meat seasonings and toppings to go along with it.

As a grain-free, keto gal (corn is a grain, too!), the thought of scooping copious amounts of taco meat on a soft tortilla is a distant memory. Taco salads don’t count. A taco salad is not a taco. It may taste like a taco, it may smell like a taco, but without a tortilla it is not a taco, it’s a salad.

Now all of us keto-loving, grain-free, paleo-following folk can dine on an epic keto taco with an actual soft tortilla. They’re crispy, they’re chewy, they’re keto tortilla perfection if you ask me.

The great thing about these keto tortillas? They don’t get soggy. You can pack them for you lunch the night before, stuff them with all the good stuff and they’ll be just as good the next day.

Allergy to eggs?… have a taco salad… just kidding! If you’re allergic to eggs, it may just be the egg white. You could try this recipe with egg yolk. If you do, let me know how it goes.

Keto Grain-free Soft Tortilla Tacos

3-Ingredient corn-free, low-carb, keto soft tortillas stuffed with taco meat, zucchini salsa and MCT guacamole.
Per Tortilla (multiply for how many tortillas you want to make)
Taco Beef
Zucchini Salsa
  • 1 tomato, diced
  • ¼ cup diced zucchini
  • 2 tbsp fresh cilantro, chopped
  • 1 green onion, sliced thin
  • ½ lime, juiced
  • 1 teaspoon avocado oil
  • ½ teaspoon sea salt
  • ⅛ teaspoon cayenne
MCT Guacamole
Optional Toppings
  • Sliced olives
  • Iceberg
  • Cilantro
  • Yellow bell pepper
  • Avocado
  1. For the grain-free soft tortillas: Add a drizzle of avocado oil to your cast iron pan and heat over medium for 1-2 minutes. Meanwhile, whisk egg white, cream of tartar and lime zest. Pour into preheated pan, roll around until circular. Cover pan with a lid and cook for 2-3 minutes. Remove cover, flip and cook another 2-3 minutes, no cover. Fold in half and remove to a cooling rack. Repeat until you’ve made enough tortillas to make you happy.
  2. For taco beef: add all ingredients to a pan and saute until beef is fully cooked through.
  3. For zucchini salsa: add all ingredients in a bowl. Toss to combine and set aside.
  4. For MCT guacamole: add all ingredients into the jug of your blender and pulse quickly, until chopped and combined. Or, mash in a bowl.
  5. To assemble tacos: hold tortilla in the palm of your hand and fill starting with taco meat. Enjoy!
Avocado oil: if you don’t want to use avocado oil to fry with, leaf lard works great, or coconut oil.

Cast iron pan: I used a 10-inch cast iron pan that I’ve had for 8 years and I love to pieces.

Vitamin C crystals: are used to prevent the avocado from browning. Works like a charm

For the meat, I used grass-fed regular ground beef. You could use any meat here. Turkey, chicken, pork, whatever you’d like.

  2. Out of curiosity, are these crispy enough that you can cut them up into triangles like tortilla chips and make nachos? I’m loving the idea of the cream of tartar hardening up those egg whites. Can’t wait to try!

  3. I tried the recipe for the tortillas and I loved them. First I do use the egg whites in the carton, works great. I use about 1/4 cup per tortilla.. I add in garlic powder and chives with a sprinkling of lemon pepper. After I pour the egg white into the pan I sprinkle cheese on the tortilla. I wait until the cheese is getting soft and then I flip it over. If you don’t want to add the cheese and then flip, flip and then add the cheese to the cooked side and then flip again to crisp and melt the cheese. I also found that I can keep the tortillas in the frig for a long time and they keep really well. When I want to use a tortilla I place it in a pan unfolded to heat it up, they taste like fresh made. Oh, for me waiting a day to eat them also take out the egg taste.

    I won’t need to “try it before I’ve knocked it”. I’ve had plenty of eggs in my life.

    Please provide an alternative.

    • Not sizzling at all! You’ll want it on the lower end of medium.
