Eggnog Smoothie with 1 Minute Vanilla Whip

I did two things with my leftover homemade eggnog – pancakes and a smoothie.

And when all was said and done, I wish I had just made two smoothies and been done with it. The pancakes were good, but the smoothie was better.

Thankfully, I now know just how easy it is to make eggnog that making another batch doesn’t intimidate me. Maybe this time I’ll sweetened it with 2 medjool dates to lower the sugar content even further.

Until then, I’ll just stare at this picture and remind myself how darn tasty this was!

A high protein, low calorie whipped topping that’s sure to compliment any bar, cookie, cake or… smoothie.
Ingredients
Instructions
  1. Combine ingredients in a small bowl and whip with hand blender or whisk for 1 minute.
Notes
If you don’t have stevia, or don’t like the taste, you could also use ¼ teaspoon liquid sweetener like honey or maple syrup with ¼ teaspoon pure vanilla extract

Go an extra step by turning your homemade eggnog into a delicious breakfast treat!
Ingredients
  • 1 cup homemade eggnog
  • 8 ice cubes
  • 1 frozen banana *see note
  • 1 scoop protein powder – I used [url:2]Jay Robb vanilla egg protein
  • [/url]1 tablespoon chia seed
Instructions
  1. Place all ingredients in your blender and blend until smooth.
  2. Top with vanilla whip and a dash of cinnamon or nutmeg.
Notes
If you don’t want to use a banana, replace with 2-3 extra ice cubes depending on how icy you want your smoothie.
