Quinoa flakes are similar to quick oats. They’re granules of quinoa that have been pressed thin. They cook a lot quicker than regular quinoa and retain less of their texture when they’re cooked.


Quinoa is loaded with protein, heart-healthy fats, bone strengthening minerals and anti-inflammatory phytonutrients.

And the cool thing? Quinoa flakes can be used as the main ingredient in these highly nutritious, super simple, ultra fantastically vegan breakfast cakes that I like to call Quinoa Flake Bakes.

5 minute breakfast cake made with gluten-free quinoa flakes, homemade vegan eggnog and apple sauce. Quick, easy, healthy and delicious!
  1. Combine ingredients in a small bowl. Stir until fully mixed.
  2. Transfer mixture to a lightly oiled ramekin that holds at least 1-1/2 cups.
  3. The cake can either be baked in the oven, 350F for 20-25 minutes, or in the microwave, 2 minutes or until the cake pulls away from the sides of the dish.
  4. When complete, top with sliced fruit, nuts and perhaps a drizzle of Vegan Eggnog Coffee Creamer.
Unsweetened Apple Sauce: You could also try using half egg whites and half apple sauce to increase the protein if you can do eggs.

Eggnog Creamer: if you don't want to make the creamer, you can add 2 tablespoons of eggnog or, add 2 tablespoons of extra apple sauce.

  1. I love your quinoa flake bakes and this one is no exception. I just made it and it was great. I’m confused on the nutrition info though. Is the creamer not included? The info for the creamer alone has 26g sugar for 2 Tbl, and you use 2 Tbl of the creamer in the flake bake but it has only 9.6g sugar listed.

  2. Can you make quinoa flakes from quinoa by putting it in the food processor or blender???

  3. Well, I don’t do breakfast (my stomach just canNOT handle food until I’ve been up for several hours), but I’m thinking waffles for the SO. They’re just so quick and easy.

    I know you’ve had those little quinoa bake vessels for awhile, but do you remember who made/makes them? They are TOO cute, and I’m drawn to pretty bakeware. I love to have as many differently sized and shaped bakeware because when I’m experimenting in the kitchen, I never know what size pan my creation will fit in. :)
