A cool treat on a Fall day – everything you love about Pumpkin Spice Lattes with a goat cheese twist!

This weekend is going to be a fun one! My sister, cousin and I are treating ourselves to a girls weekend. We were invited to the O2 Dance Company show last night, planning to do yoga today, and we may drop in for dinner at The Coup on Sunday. Family is so, so important. I love these 2 girls to pieces.

A cool treat on a Fall day – everything you love about Pumpkin Spice Lattes with a goat cheese twist!
Ingredients
  • 1 cup brewed coffee, cooled
  • ½ cup water or milk
  • ½ cup canned pumpkin puree (not pumpkin pie filling!)
  • 2 tablespoons Happy Days Dairies Plain Cream Cheese
  • 2 tablespoons maple syrup
  • ½ teaspoon pure vanilla extract
  • 10 ice cubes
Instructions
  1. Add all ingredients to the jug of your blender in the order listed. Blend on high for 20 seconds, or until smooth.
  2. Pour into two glasses and serve!
Notes
To make dairy-free: replace cream cheese with dairy-free cream cheese or yogurt. Use non-dairy milk.

To make sugar-free: use 3-4 pitted medjool dates instead of maple syrup.

Need to make it dairy-free? Use a combination of half dairy-free yogurt and half mayonnaise.
