Red Rooster Smoothie

I am in love with light smoothies right now.

Just a touch of fruit, a little water, a bunch of veggies and; if my body needs it, a scoop of protein powder, seeds or healthy oils, and I’ve got a big, summertime smile painted right across my face.

The family and I; Kevin, my little sister, her boyfriend, Mom and Dad (plus our two dogs), have spent the last couple of days camping in British Columbia.

Friday, we loaded up a large cooler with cucumbers, spinach, beets, berries, grapes, oranges, peaches and protein powder, all for making smoothies.

We’ve kayaked, golfed, went for glorious walks in the sunshine, napped…

It’s been quite fun.

Of all the different smoothies we’ve experimented with, the Red Rooster has been everyone’s favorite, by far!

A bright red smoothie made with loads of veggies and a touch of fresh fruits.
Ingredients
  • 1 cup water
  • 6 strawberries
  • 2 slices of raw red beet, chopped (approx. 2 tablespoons)
  • 15 green grapes
  • ½ cucumber, skin removed
  • ½ orange, skin removed
  • 2 large handfuls of spinach
  • 4-6 ice cubes
Instructions
  1. Add all ingredients to the jug of your blender in the order they are listed and blend for 20-30 seconds, until smooth.
  2. Serve immediately.
Notes
Adding protein powder or chia seed into the mix will help with natural separation of the ingredients. I don’t mind the separation (I just swish the mixture around a bit as I'm drinking it and it tastes fine!) but it’s a preference thing.

A touch of raw beet gives this green smoothie a bright and cheery glow.

Plus, it hides the spinach quite nicely!

Interested in adding a boost of protein, healthy fats or fiber?

Vega One protein powder would be fabulous in here.

3 tablespoons of shelled hemp seeds or 1 tablespoon of chia seeds would add protein, fiber and healthy fats.

1 tablespoon of flax oil would help lower your cholesterol and maintain a healthy digestive system.

    I’m generally fructose intolerant so the most I could manage is maybe 5 grapes in a smoothie. I also can’t eat bananas. Is there anything I can substitute? Thank-you!

    • Hi Catriona – I would just use the couple of grapes that you can tolerate and remove the fruit. I haven’t tested it, but that’s what I would do!

  2. I made this for breakfast today, It wasn’t bad. You can really taste the beets so it tastes very fresh. I will be making it again. The kids didn’t love it I had to add more fruit for them but they did drink it.

  3. This recipe is a keeper! I made this for my husband and myself this morning and we both liked it a lot. It tastes like the juice we used to make with our juicer that we love. We aren’t using our juicer for a while because the small amount of juice we get does not justify the amount of money we spend on the fresh veggies. I like this recipe because we get our moneys worth of juice from the amount I put into the blender. Thanks so much for sharing! Oh, I didn’t have grapes so I used frozen pineapple… Mmmmmmm.
