6-Ingredient Keto Biscuits

Delicious low carb biscuits filled with bits of prosciutto and perfect with a slather of butter or coconut oil on top.

Ingredients

  • ¾ cup (155 g) mayonnaise
  • 6 large eggs
  • 1 cup (100 g) coconut flour
  • 1 ½ teaspoons baking powder
  • 12 slices prosciutto (about 3.5 oz/100 g), finely chopped
  • 3 green onions (green parts only), finely chopped

Instructions

  1. Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. Place the mayonnaise and eggs in a small mixing bowl and whisk to combine.
  3. Place the coconut our and baking powder in a medium-sized mixing bowl and mix to combine. Add the mayonnaise mixture to the dry ingredients and stir to fully incorporate. Fold in the chopped prosciutto and green onions.
  4. Divide the dough evenly into 12 pieces. Roll one piece into a ball between your palms, then place it on the lined baking sheet and press down with your palm until it’s 1 inch (2.5 cm) thick. Repeat with the remaining dough pieces.
  5. Bake for 15 to 20 minutes, or until the edges of the biscuits begin to turn golden and the tops crack a bit.
  6. Remove from the oven and serve.

Notes

Keep in an airtight container in the fridge for up to 3 days or in the freezer for up to 1 month.
