I just love making these ahead of time. Either cook and store in the freezer for quick reheat or store raw separated by waxed paper, in airtight container and freeze for up to 1 month.
Ingredients
  • ¾ cup finely chopped onions
  • 1 egg
  • ½ cup quinoa flakes or wheat germ
  • 2 tablespoon grainy mustard
  • 3 tablespoon parsley
  • ½ teaspoon crumbled dried thyme
  • ½ teaspoon himalayan rock salt
  • ½ teaspoon pepper
  • 1 lb ground bison
  • 0.5 lb ground yak
Instructions
  1. Preheat oven 350F
  2. In large bowl, mix together egg, quinoa flakes, mustard, thyme, salt and pepper. Stir in onions, and parsley, then bison and yak; mix until just combined. Shape into ¾-inch thick patties.
  3. Place on pan and cook for 15 minutes
  4. Add barbecue sauce of your choice (or chili sauce works really well)
  5. Remove pan from oven and pour sauce over patties. Return to oven and bake 30 minutes
