Creamy Tahini Salad

This salad dressing is creamy, light, and high in healthy fats.

Ingredients

Dressing

  • 1/2 avocado
  • 1 1/2 tablespoon Manitoba Harvest Hemp oil
  • 1 tablespoon stone ground mustard
  • 3 tablespoon chickpea reserve water
  • 2 teaspoon tahini
  • 1 tablespoon lemon juice
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon ground coriander
  • 1/4 teaspoon herbamare

Salad

  • 4 cups romaine mix
  • 1 cup cooked chickpeas – reserve liquid for dressing
  • cucumber
  • yellow pepper
  • carrots
  • celery

Instructions

  1. Combine all dressing ingredients in a food processor or blender and process until smooth.
  2. Place salad ingredients in a medium sized bowl and top with dressing. Toss until coated and serve.
  3. Use sesame socca crackers in place of croutons!
