I created this Happy Tummy Breakfast Pudding recipe a couple of years ago and loved it so much that I ate it for breakfast for 6 solid months.

The recipe was phenomenal. So delicious. The only thing I didn’t like about it was that it used store-bought yogurt. That stuff can be pretty darn expensive, not to mention hard to find. So, I made this recipe.

My favorite part? It’s grain-free, too. Woo!

Blended breakfast pudding that's high in fiber and has absolutely no added sugars.
Ingredients
Instructions
  1. Add chia and water to a large bowl. Cover and sit at room temperature for 1 hour.
  2. Add to the jug of your high-powered blender along with banana, lucuma powder, water, dates, vanilla and salt.
  3. Blend until smooth.
  4. Divide equally into 4 bowls. Top with goji berries, cacao nibs, sliced almonds, hemp seeds or fresh fruit.
Notes
Lucuma Powder: is what I used instead of sugar in this recipe. It gives the pudding a light maple flavor. You could replace it with a touch of maple syrup. I have not tested this.

This recipe is really simple. Soak, blend, top, eat.

I stored the leftover pudding in the fridge for 2 days and it was fine. I wouldn’t leave it longer than that, though.

Lucuma powder is often used in raw baking to give the item a natural maple-like flavor, but without the sugars found in maple syrup.

It has high levels of carotene, vitamin B and iron. Great for the pregnant ladies out there, too!

Top with whatever you’d like. For mine, it was slivered almonds, cacao nibs and goji berries. My favorite combo.

  1. Hi I am just starting with a new healthy lifestyle and I can’t really afford Lucuma powder at the moment! I don’t know if it’s the same elsewhere but it’s really expensive in the uk! Also I’m don’t really like maple syrup. Is there another substitute?

  2. Could this be heated before eating. I have a preferance for warm breakfast, especially since it seems winter is lasting forever!

  3. If you can’t have bananas, watch out with the dates. They are super high in sugar!

  4. This looks so good! I have made chia pudding before but thought to add a banana to the mix. I bet it gives it a richer texture. Thanks for the recipe. :)
