Caramel Apple Cupcakes (gluten-free + paleo)

Paleo + Gluten-free Caramel Apple Cupcakes

Congratulations, Liz! You’re the winner of the Natural Vitality $60 gift card! Thank you all for participating :)

I remember hearing this for the first time (while studying holistic nutrition at CSNN) and being pretty upset about it…

It is impossible to get all the nutrients your body needs from the food you eat. No matter how organic, free-range, non-GMO or holistically awesome your diet is.

Total bummer, right?

I thought that if I had the healthiest of healthy diets, I wouldn’t have to worry about my nutrient intake. Sadly, depleted soil and high levels of environmental toxins make it impossible for us to live 100% supplement free.

The silver lining in it all – there are a couple of really great, organic, awesome supplement companies out there that make picking supplements to support your diet fast, easy and inexpensive.

I introduced Natural Vitality Plant-Sourced Minerals to my supplement routine about a month ago in an effort to boost my intake of trace minerals. The cool thing about these guys is that they’re bioavailable which means they’re in a simple form that your body can use up right away.

Because of all the smoothies I drink, I gravitate more toward liquid supplements so I can just add everything to my morning smoothie and move on with living out my day.

That, or BAKE with my supplements! While it’s not good to bake with vitamins (vitamins are damaged when they’re heated) minerals thrive in heat.

Minerals… cupcakes… it had to happen. Taking your daily dose of supplements never tasted so good!

Healthy coconut flour cupcakes with apple pieces, plant-sourced minerals and spinach. Drizzled with dairy-free caramel.
Ingredients
Wet
Dry
  • ¼ cup arrowroot starch
  • ¼ cup coconut flour
  • ¼ teaspoon baking soda
  • pinch sea salt
  • ⅔ cup diced granny smith apple (about 1 medium-sized apple)
Caramel Nut Topping
  • 2 tablespoons smooth nut or seed butter (I used tahini)
  • 1 tablespoon honey
  • ¼ teaspoon pure vanilla extract
  • 2 tablespoons raw walnut pieces
Instructions
  1. Preheat oven to 350F and line a 6-tin muffin pan with paper liners. Set aside.
  2. Add wet ingredients to the jug of your blender, blend for 30 seconds.
  3. Add dry ingredients and blend for 15 seconds. Turn off the blender and let the mixture sit for 2 minutes.
  4. Drop in apples and swish around in the jug. Do not blend!
  5. Pour mixture into prepared muffin pan.
  6. Bake in preheated oven for 22-25minutes, until toothpick inserted comes out clean.
  7. Remove from the oven and immediately remove the cupcakes from the pan and set on a cooling rack to cool completely.
  8. Once cooled, add nut butter, honey and vanilla to a small frying pan. Heat on medium-low, stirring constantly until bubbles form. Continue to heat for another 10 seconds. Then, drizzle over top of the cupcakes. Immediately top with walnut pieces.
Notes
Natural Vitality Plant-Sourced Minerals - is a mineral liquid concentrate. It has a very watery consistency. Although I haven't tried it, if you do not have plant-sourced minerals on hand, it could likely be replaced with apple juice.

Apple pieces - float to the bottom of the cupcakes which we loved! If you don't have apples, they're not 100% required for this recipe. If you want to omit them, go for it! You could replace it with ½ teaspoon of vanilla extract.

  1. I really liked the post about 20 things to know about apples. I didn’t realize they had so much fiber, or that conventional had so much pesticide residue
