Chicken Waldorf Salad

I enjoy my fair share of chicken, fish, and wild game meats, but you’d never know it from the recipes that I share here on the blog. Although I’d love to document my meat eating action and share with you the balance I maintain between plant and animal based proteins, I’m sad to admit that these meals are anything but creative and would be somewhat boring to take pictures of. You can generally find me with a baked chicken breast in hand, eating it like a muffin, or standing at the fridge snacking on some Canadian back bacon dipped in Dijon mustard. How’s that for a recipe? Ha! Well, today I have a real treat for you. I actually baked chicken and did something with it. I know, crazy concept… I roasted walnuts, made a Goat Milk Yogurt dressing, and served it up on a bed of romaine leaves. Oh boy, I could get used to making yummy things with chicken breasts.
