Hi, my name is Leanne… and I’m addicted to quinoa breakfast cookies, cookies, breakfast… and quinoa.

In the last month, I’ve made Quinoa Carrot Cake Breakfast Cookies, Quinoa Zucchini Chocolate Chip Breakfast Cookies, Quinoa Banana Bread Bread Breakfast Cookies and now these Quinoa Apple Pie Breakfast Cookies.

All of these recipes share the same concept of replacing the oats with cooked quinoa. And, for an added benefit, I’ve cut out the grains in this apple pie version.

  1. I know the quinoa is intended to replace oats, but do you think you could sub old fashioned oats or oat flour for the almond meal/flour? I don’t always have it available.

  2. Whoa, mama! I am making these tonight!! I am having to sub out the maple syrup for a combo of honey, molasses and agave because I don’t have the former but EVERYTHING else was on hand. It’s a little late to start baking but WHO CARES! :D

    • Be careful with agave nectar ,as it has a low glycemic index , only BC it goes straight to the liver, not good.

  3. These are such a great idea! I am really into muffins right now because I can eat it with one hand! Maybe I should add some quinoa to my muffins? Also, I was blown away by the spinach in your muffins last week! You are crazy good with how to fill your food with nutrition!!!!
