It’s official – we are PADI certified open water divers!
We completed our last dive yesterday, off the coast of Catalina; one of Dominican Republic’s many islands. I know I’ve been told how many islands there are in total, but I can’t for the life of me remember.
Our first dive of the day was a 45 minute adventure scaling an amazing sea wall that spanned as far as the eye could see (we have video that I can’t wait to share with you!!). We hung out at the surface with the instructor and quickly decided that yesterday couldn’t be our last day diving. After all, it will be another year until we can go on another diving trip…
Soooo, we decided to sign up for another 3 dives for today.
My lunch is packed – buffet dinner from last night of chicken breasts, cauliflower, cucumber, carrots, 2 avocados, and a bag full of almonds, the towels are dry, and we’re ready to rock yet another island adventure!
…and I’ve been promised that I can nap for the whole 2 hour ride there.
PS: A couple of you have asked for the coconut breakfast smoothie I’ve mentioned a couple of times since we’ve been on vacation. Here’s the very unofficial, no pictures taken, recipe.
Coconut breakfast smoothie
So filling, delicious, and packed with everything I need for a day of diving!
- 500mL water
- 2 tablespoon chia seeds
- 2 tablespoon freshly ground flax
- 2 tablespoon coconut milk powder
- 1/4 teaspoon probiotics – great to keep the flu or travelers diarrhea at bay
- 1 scoop egg protein
- 2 tablespoon liquid magnesium
- 1 teaspoon cod liver oil
- 1/4 cup shredded unsweetened coconut
- Place all ingredients but magnesium in a shaker cup and allow to sit overnight or for at least 30 minutes.
- Add magnesium and enjoy!
