Dominican Republic: Part 2

It’s official – we are PADI certified open water divers!

We completed our last dive yesterday, off the coast of Catalina; one of Dominican Republic’s many islands. I know I’ve been told how many islands there are in total, but I can’t for the life of me remember.

Our first dive of the day was a 45 minute adventure scaling an amazing sea wall that spanned as far as the eye could see (we have video that I can’t wait to share with you!!). We hung out at the surface with the instructor and quickly decided that yesterday couldn’t be our last day diving. After all, it will be another year until we can go on another diving trip…

Soooo, we decided to sign up for another 3 dives for today.

My lunch is packed – buffet dinner from last night of chicken breasts, cauliflower, cucumber, carrots, 2 avocados, and a bag full of almonds, the towels are dry, and we’re ready to rock yet another island adventure!

…and I’ve been promised that I can nap for the whole 2 hour ride there.

PS: A couple of you have asked for the coconut breakfast smoothie I’ve mentioned a couple of times since we’ve been on vacation. Here’s the very unofficial, no pictures taken, recipe.

Coconut breakfast smoothie

So filling, delicious, and packed with everything I need for a day of diving!

Ingredients

  • 500mL water
  • 2 tablespoon chia seeds
  • 2 tablespoon freshly ground flax
  • 2 tablespoon coconut milk powder
  • 1/4 teaspoon probiotics – great to keep the flu or travelers diarrhea at bay
  • 1 scoop egg protein
  • 2 tablespoon liquid magnesium
  • 1 teaspoon cod liver oil
  • 1/4 cup shredded unsweetened coconut

Directions

  1. Place all ingredients but magnesium in a shaker cup and allow to sit overnight or for at least 30 minutes.
  2. Add magnesium and enjoy!

    That smoothie has just about everything in it — I’ve been thinking about buying some cod liver oil for my kids. I’ll have to make a trip to the store today =)

  4. Congrats on all of your diving progress Leanne! That’s so exciting and it sounds like you’re having so much fun! You don’t by any chance have one of those under water cameras do you? If I ever go diving (and I do plan to some day!) I’d love to take one with me to take photos of the fish etc. Is the water quite clear? Enjoy your 3 dives today!

    • We didn’t get a camera for this years’ trip, but there was a videographer that took tons of video for us. The water was really clear on Wed +Thursday when the weather was better, but was pretty bad on Tuesday. The rainier and cloudier it is, the worse the conditions will be. Can’t complain though, it’s so quiet and amazing down there.

  5. I am so happy for you that you’re loving the diving adventure….and you signed up for 3 more! It’s been too long since I’ve dove; and next to me right here! sits my dive gear, reg, mask, octos, etc…I need to dust it off. Been doing more baking than diving the past few trips here :)
