Cacao Macaroons

No bake macaroons with superfood powers!

Eating Style:

Prep Time:




  • ¼ cup goji berries, soaked in water for 1 hour, drained and rinsed
  • ¼ cup sunflower & pumpkin seeds, soaked in water for 12 hours, drained and rinsed
  • 8 cups water, boiled
  • 1 cup cacao butter or coconut oil, melted
  • 2 cups cocoa powder
  • 1 teaspoon vanilla extract
  • 2 cups shredded coconut
  • 1 tablespoon chia seeds
  • 1 tablespoon maple syrup


  1. Boil water and place in glass or metal mixing bowl
  2. In smaller bowl, combine cacao butter and vanilla. Place small bowl in mixing bowl with water and use as a “double broiler”
  3. Be careful not to splash water into cacao butter mixture
  4. Continue to stir cacao butter until melted. Remove from water and add cacao powder
  5. Continue to stir until mixed
  6. Add remaining ingredients, taste, and adjust for your preference
  7. Allow to firm up in the fridge or freezer
