Raw Mojito Drops

These fruit and nut balls make for a perfect [simple] sunny afternoon snack.

Ingredients

  • 10 medjool dates, pitted
  • 1/2 cup almonds
  • 1/2 cup coconut
  • 8 mint leaves
  • 1 tablespoon lime juice
  • zest of one lime

Instructions

  1. In a food processor, chop almonds until they’re the size of the eraser end of a pencil. Remove from food processor bowl and set aside.
  2. Place remaining ingredients in the food processor and combine until dates are fully mashed [you’ll know when it’s ready when the dates clump together in one large ball] Add almonds back in and pulse quickly, just until incorporated.
  3. Grab a scoop at a time [about a tablespoon size or a bit bigger] and roll into balls. Place completed balls on a freezer safe plate. Repeat with remaining dough. Place balls in the freezer for 5-10 minutes, remove and enjoy!

Notes

I like to keep them in the freezer for quick access. I prefer them cold, but they’re just as tasty at room temperature and will hold their form well.
