Staying Motivated: Eat Healthy Wherever, Whenever

My 4-day getaway to New York City is underway.

This city lights me up and turns me ON. Creativity flows, internal fire blazes, magic happens.

I crafted a healthy meal plan for myself before I made the trek out here. No ultra technical tricks, fussy shenanigans or complicated processes, just a list of meals for my 3-day hostel stay sandwiched between 22 spectacularly scenic (but very long) hours on the Amtrak train.

The plan took me 20 minutes to dream up. Just 20 minutes to plan what I was going to take with me on the train, the groceries I was going to pick up when I got in the city, and a guideline of the recipes I’d make during my stay. Easy peasy, just the way it should be.

  1. Meal planning around our house has always revolved around what’s in season, what we’re hungry for, and what’s easiest to do based on our schedule!

    So, i just watched/listened to your presentation and i wanted to say thanks. It is so great, and i really like that your view of “balance” includes every type of food (even meat) and is “doable” by anyone.
    Labor law layer in Paris, i am turning naturopath/nutritionist (starting classes in September) and your blog is one of those i am always checking for new creative ways to approach food.

I’ve been following your blog for a while now, along with several other nutrition sites, but haven’t been sure what plan to follow — only thinking that I should have SOME plan. So hearing your voice, your explanations and ideas makes me feel more confident going forward.   5. These are such great tips, Leanne! After deciding to eat a more plant-based diet a few years ago, meal planning was something I really struggled with. After much trial and error, I developed a system that worked for me. I follow a lot of the same tricks that you shared today. I have to say, it is life changing!

  7. I really enjoyed your presentation in March – had to hide in my bedroom and shoo my young ‘un away a couple times, but mostly it was effortless, entertaining and educational. Thank you for sharing it out to the world!

    My greatest meal planning coup to date was a week-long trip from our home in the Atlanta, GA, area to Charleston, SC. My husband, our two sons and I packed into my little Honda Fit (it was when gas prices were ridiculous) and I had the forethought to pack freshly made hummus, sliced veggies, fruits, nuts, sliced meat, sandwich wraps, and seeds (plus some AWESOME ginger-packed fruit juice from our juicer). We made it the ENTIRE TRIP without once going to fast food. That was a HUGE accomplishment for us! :)
