I’m all for chowing down on a fresh salad at any time of the day, but when the temperature drops and no amount of hot showers can warm me up, I’d rather drown myself in a warm bowl of veggies and an afternoon nap than chill out with a bowl of fresh veggies. One of my favorite salads right now is preparing a bowlful of roasted veggies with balsamic dressing and mashed goat cheese. It’s so darn good I could eat it all day… but it aint pretty. If I saw someone eating it, I would judge them. Heck, I would think that they were eating dog scraps. So, in an attempt to introduce my favorite meal to the world, I prettied everything up, layered it nicely, and took pictures of my otherwise less-than-photogenic daily salad. It looks good, it tastes good, you could serve it to friends and wow them with your mad kitchen skillz… but you better believe the next time I’m caught eating this salad, it’ll be in a bowl all mashed up and as ugly as ever.
