Almond Flour Biscuits

We’re going to use these biscuits in tomorrow’s recipe. Any guesses on what it will be?

Almond Flour Biscuits

Inspired by: Elana’s Pantry

Ingredients

  • 2 1/2 cups blanched almond flour
  • 1 tsp Himalayan salt
  • 1/2 tsp baking soda
  • 1 tbsp ground flax
  • 1/4 tsp El Peto Onion Soup Mix (onion powder would work too)
  • 1/4 cup coconut oil
  • 2 eggs
  • 1 tbsp water

Directions

  1. In a medium bowl, combine almond flour, salt, baking soda, flax, and onion soup mix
  2. In a large bowl, blend together coconut oil, eggs and water
  3. Stir the dry ingredients into the wet until a nice dough forms
  4. Roll out dough on cutting board (prevents stickiness) to 1 ½ inches thick
  5. Dust dough with extra almond flour if it is sticky and/or misbehaving
  6. Cut the dough into biscuits using the lid to the coconut oil jar (3 inches)
  7. Using a spatula, transfer biscuits to a parchment lined baking sheet
  8. Bake at 350F for 15 minutes, until biscuits are browned on the bottom edges

Makes 4 biscuits

I have made these biscuits several times now and really enjoy them. The onion flavouring is a nice touch. Good way to have a biscuit and some protein, too!
