Almond Flour Biscuits
Inspired by: Elana’s Pantry
Ingredients
- 2 1/2 cups blanched almond flour
- 1 tsp Himalayan salt
- 1/2 tsp baking soda
- 1 tbsp ground flax
- 1/4 tsp El Peto Onion Soup Mix (onion powder would work too)
- 1/4 cup coconut oil
- 2 eggs
- 1 tbsp water
Directions
- In a medium bowl, combine almond flour, salt, baking soda, flax, and onion soup mix
- In a large bowl, blend together coconut oil, eggs and water
- Stir the dry ingredients into the wet until a nice dough forms
- Roll out dough on cutting board (prevents stickiness) to 1 ½ inches thick
- Dust dough with extra almond flour if it is sticky and/or misbehaving
- Cut the dough into biscuits using the lid to the coconut oil jar (3 inches)
- Using a spatula, transfer biscuits to a parchment lined baking sheet
- Bake at 350F for 15 minutes, until biscuits are browned on the bottom edges
