Dairy-free Cheddar Apple Muffins

A slice of cheddar cheese over top a wedge of my Mom's homemade apple pie reminds me of Fall. Instead of spending hours in the kitchen making an apple pie, you can achieve the same great taste, aroma and satisfaction by baking a batch of these cheddar apple muffins made with a dairy-free cheese. They're to die for!

Instructions
  1. Preheat oven to 375F. Line a muffin pan with paper or silicon liners and set aside.
  2. Whisk all dry ingredients in a medium-sized bowl.
  3. Combine all wet ingredients in a large bowl.
  4. Add dry ingredients to wet ingredients and mix until incorporated. Don't mix too much or you'll have rock-hard muffins.
  5. Fold in apple and cheese.
  6. Drop batter into prepared muffin tins and bake for 22-25 minutes, or until toothpick inserted comes out clean.
  7. Allow muffins to sit in the pan for 1 minute before removing from the pan and placing on a cooling rack to cool.
  8. Store baked muffins in the fridge for up to a week, or freeze in an air-tight container for up to 3 months.
Notes
Date sugar can be found at any health food store. Alternatively, you can use coconut sugar or brown sugar. Feel free to use any type of oil that you have on hand. Safflower or grape seed oil would work well! To make vegan, you can try to replace the 1 egg with a flax egg (1 tablespoon of freshly ground flax seed combined with 3 tablespoons of warm water and allowed to sit for 5 minutes) add to the recipe at the same time you would the egg. I have not tested this, but I'm about 95% certain it would work.
