5-Minute Vegan Cream of Tomato Soup (Paleo, too!)

8-ingredient creamy tomato soup without the cream. This easy, blend and go recipe is high in flavor, nutrients and feel-good whole food ingredients.
  • 4 (375 grams) roma tomatoes
  • ½ cup (85 grams) sun dried tomatoes
  • ½ cup raw macadamia nuts
  • 1 teaspoon sea salt
  • ¼ cup (20 grams) fresh basil
  • ½ teaspoon white pepper
  • ¼ teaspoon black pepper
  • 1 clove garlic
  • 4 cups hot water
  1. Add all ingredients to the jug of your high-powered blender and blend, on high, for 5 minutes until heated through.
  2. Serve with a side of homemade sweet potato tortilla chips, if desired.
Macadamia Nuts: the trick is in the nuts. I would not omit these from the recipe. They give it SO much flavor.
