Pink Lady Carrot Juice

A 3 ingredient vegetable-based juice made from a base of sweet potato that's sure to boost your immune, improve complexion and mega load your body with beta carotene.
  • 1 medium beetroot, washed and quartered
  • 5 large carrots, washed
  • 1 medium sweet potato, washed, peeled and quartered * see note
  1. If you have a ‘high’ setting on your juicer, is it to make this juice. Begin with beets and work your way down the ingredients list.
Many sources have said that the sweet potato should be peeled before juicing so that's what I did here. Generally I do not peel veggies before juicing them. Just a good wash is often all they need.
