Keto eggnog! Better late than never, right? I’ve been drinking these keto lattes for the last couple of months and realized, on Friday, that I hadn’t shared the keto recipe with you. How rude of me, I know.

There are lots of recipes on the blog that are eggnog themed, none quite like the other. The thing that was missing in my little eggnog collection was keto eggnog lattes. No one can resist an eggnog latte. Or, at least if that no one loves eggnog.

When you read the keto recipe today you’re likely going to question my sanity. Why? Because there’s raw egg in it. When I was vegan, even the thought of eggs; cooked or raw, terrified me.

BUT WAIT! Of all the foods in the land, eggs are one of the healthiest, and they’re oh so keto. Yes, eggs.

Eggs. One Of The Healthiest Foods In The World

They’re rich in…

Omega-3. We learned this week that omega 3 fats are where it’s at.

Cholesterol (that’s a good thing). Congrary to popular belief, dietary cholesterol doesn’t contribute to our cholesterol level. In fact, cholesterol is SO important to our functioning, that every single cell in our bodies has the ability to generate cholesterol.

Vitamin E. It’s a natural antioxidant, allowing our cells and vascular system to thrive. Also great for preventing aging.

Vitamin B. Which is needed for nervous system maintenance. The more stress you have in your life, the more B vitamins you need.

Lecithin. A naturally occurring emulsifying agent that assist the breakdown and assimilation of the keto-friendly fats in the yolk.

The nutrient benefits to eggs is broad, vast, epic, even. I could go on forever about the benefit they could do in everyone’s life. But I think you get the picture, yes?

Why Eating Eggs Raw Is Awesome (and Safe)

Eggs cooked are great and perfectly keto, but eggs RAW are better because all of the nutrients and benefits I shared above are kept in tact.

Conventional eggs run the risk of being contaminated. We don’t want bugs from the food we eat, especially when salmonella is concerned.

To avoid contaminated, unsafe eggs, look for…

Organic. Adhering to organic standards, the eggs are less likely to be contaminated and will have higher nutrient quality.

Pasture-raised. There are a lot of marketing hot words with eggs. Things like “free-run”, which could mean that they were free to run indoors with billions of other hens or “free range” which may translate to the hens being allowed to roam for a couple of moments a day. In the end, you’re best off with pasture raised eggs.

Tip. Visit your local farmers market for a selection of potential pasture-raised keto-friendly eggs.

A dairy-free, keto eggnog latte made with MCT oil that propels the health of your body and brain, boosting your metabolism and providing steady energy all day through.

  1. Brew coffee, add to the jug of your high-powered blender along with remaining ingredients and blend on high for 1 minute. Transfer to a cup, top with a sprinkle of cinnamon and enjoy.
Notes
To make coconut-free, use hemp oil in place of coconut oil and hemp milk instead of coconut milk. The is a bit “hemptastic” as my husband pointed out. If you find it too, it’s likely in the oil. You can add more spices to mask or use another of your favorite oils. However, MCT will generate ketones which will allow you to increase energy and benefit from that ketone development whereas hemp oil will not do this.

If you’re sensitive to coconut, I’ve included a couple of substitution suggestions in the notes of the keto recipe above.

You could use hemp milk in place of coconut milk, if you’d like.

For fats, I use BulletProof Brain Octane MCT oil in my dairy-free keto rocket fuel lattes. This keto-friendly oil is the most powerful for MCT generation, aside from the ketone generating oil blend I shared with you on Thursday (win a bottle of it here).

You could also try adding hemp oil to your blended coffee. If the spices are increased, it tastes pretty good!
