Ingredients
Instructions
  1. Add raw cashews to a glass container. Cover with water and soak for 6 hours, covered, in the fridge.
  2. Drain and rinse. Add to the jug of your high-powered blender along with all other ingredients: water, lemon juice, macadamia nuts, nutritional yeast, salt and pepper.
  3. Blend until smooth, about 3 minutes. You may have to tamper down the ingredients as you go. The mixture will be thick and creamy. Try to avoid adding water.
  4. Serve with a batch of my keto Herb Crackers.
  5. Store in an air-tight container for up to 3 days. The sour cream will thicken up over a couple of hours. To make just a bit creamier, add a touch of water and stir.
Notes
Nutritional yeast: makes this recipe. It must be added. Just won't be the same without it.
Cashews: you could try using another form of nut here. Perhaps almonds with skin removed or sunflower seeds? I have not tested this.
White pepper: you could try with black, I just like white pepper because it's mild, yet still has a slight taste of pepper without overpowering the dish.
Soak time: this recipe will not work if you do not soak the cashews.

The combination of nutritional yeast with the macadamia nuts and white pepper, gosh, it’s enough to make a girl want to make a batch of Roasted Herb Crackers and watch reruns of Lost alllll day long.

Not like I’ve ever done that before…

  1. I have try this, just to ask, when you saw raw, you mean RAW nuts? (mundane question, I know) sorry =)

  2. Can’t believe it’s almost wedding day! Remain calm, everything will be beautiful! So happy for you and Kevin!

  3. Even though Nutritional Yeast is often marked Gluten free. If you have Gluten sensitivity issues or Celiac disease when Nutritional Yeast is digested the body will perceive it as Gluten and the body will respond to it just as if the food actually contained Gluten. It’s s bummer but it’s true. So if you have Celiac or Gluten sensitivity issues most likely consuming nutritional yeast will be as difficult for your body as diary. Many people with Gluten sensitivity issues or Celiac can not have diary even though it’s gluten free because of gut damage that has already occurred in the past so the body will also perceive any Dairy negatively and respond to it in the same way it reacts to Gluten :( Sure would have other wise enjoyed this recipe it certainly looks delicious and I sure do miss sour cream and diary. Thank you Leanne wishing you a beautiful Wedding Day and a lifetime of bliss for you both.

    • I have Celiac disease but have no probs with nutritional yeast, so I guess not everyone reacts badly to it! I couldn’t live without nutritional yeast as can’t have any dairy either, amongst other stuff!!

Good luck with wedding Leanne, I’m busy planning mine for next year :)

      • I make mine with Bubbie’s sauerkraut and my family loves it. And if I am out of sauerkraut (i try to never be!) chickpea miso works too. Both give it that sort of cheesy taste. I have celiac and dairy allergy and don’t react as violently to nutr yeast as I do gluten but it can give me a very unpleasant headache. I have read that its very similar to MSG so I try to avoid it except maybe like twice a year.

  4. This looks AMAZING. I can’t wait to try it out. It’s so funny that you mentioned watching Lost reruns…I had a head cold this week, and that’s exactly what I did. Hot baths with eucalyptus salts and Lost reruns. Ha!

  5. Yes. Yes. Yes.

“Sour cream” made with cashews is just amazing. I would eat it on just about anything.

  6. That does look mind blowing, Leanne! Thank you! :-) And I’m so very, very happy for you all! I can’t imagine your excitement, dear!

    xoxo,
    Shirley

  7. What would you suggest I replace the macadamia nuts with,as I have an allergy to them?

  8. The very best of wishes on your wedding day next week and a lifetime of happiness, health and prosperity. :)
