Good To The Core Stuffed Apple Dessert

This dessert has all the goodness of apple pie, without all the effort.
Ingredients
Apple:
  • 1 gala apple
  • ¼ cup water
Filling:
  • 2 tablespoons raisins
  • 2 tablespoons chopped pecans
  • 1 teaspoon maple syrup
  • ¼ teaspoon ground cinnamon
  • Cream Cheese Drizzle:
  • 2 tablespoons Happy Days Goat Cream Cheese Spread or dairy-free cream cheese
  • 2 teaspoons maple syrup
  • ¼ teaspoon vanilla extract
  • ¼ teaspoon water
Instructions
  1. Preheat oven to 350F and fill a small, 2 cup casserole dish with the ¼ cup of water. Set aside.
  2. Core the apple using a melon baller or sharp knife, being sure to leave the bottom of the apple in tact so that it will hold the filling without leaking all over the place!
  3. Mix the filling ingredients together in a small bowl. Using a small spoon, scoop the filling into the apple.
  4. Place the stuffed apple in the prepared casserole dish. Cover with a glass cover.
  5. Bake for about 45-50 minutes, removing the cover after 20 minutes.
  6. Meanwhile, mix cream cheese drizzle ingredients in a small bowl. Once apple is cooked through, and tender, remove from the oven, place on a plate and drizzle with cream cheese mixture.
  7. Serve immediately.
Notes
Cream Cheese - if you can't do dairy, you can replace the cream cheese in this recipe with a dairy-free, store-bought cream cheese or make my Soy-free Vegan Cream Cheese.
