  2. Drain all liquid, leaving you with the thick coconut cream.
  3. Add the cream to your high-powered blender and blend on low until light and fluffy, about 1 minute. Add lemon extract and mix with a spatula.
  4. Spoon onto the cake and smooth with a spatula.
