Tomato Basil Salad

Just 18 days until the life I’ve always dreamed for myself begins. The suspense is killing me!

Pushing myself to travel to India alone, despite my fears and reservations, helped me to believe in myself – a gift that no one can take away from you.

It also happens to be a gift that may result in you coming home, quitting your job and joining the circus.

Consider yourself warned.

As an ode to India self realization, I figured it was about time I recreate the tomato basil salad that I feasted on throughout my time in Varkala – the part of my trip that was filled with fabulous food, meaningful conversations and lots of beach yoga.

Tomato Basil Salad

Allergens: Vegan, Gluten-free, Dairy-free, Refined sugar-free, Yeast-free, Corn-free, Grain-free, Nut-free
Prep time:

Serves: 1.5 cups, 2 servings
 
Refreshing tomato salad with leaves of fresh basil, drenched in a white wine vinaigrette.
Ingredients
  • 4 hot house tomatoes, cut in wedges
  • 10 small basil leaves
  • 1 tbsp olive oil
  • 1 tbsp white wine vinegar
  • 1 tsp palm sugar
  • ¼ tsp sea salt
  • freshly ground pepper
Instructions
  1. Combine tomato wedges and basil leaves in a large bowl. Set aside.
  2. Combine oil, vinegar, sugar, salt and pepper in a small bowl. Pour over top tomato mixture and stir to coat.
  3. Chill until ready to serve.
  4. Add hemp seeds, goat cheese, or chickpeas for extra protein!

So exciting!! I totally believe that life is too short not to do what you love! Sometimes, you might have to take steps that lead you to that place that are only temporary but I believe the same…we all are meant to do what we love! Happy for you!!!

I WISH I had a macro lens, zomg. Nope, just stole Kevin’s 7D with 24-70mm lens and went to town. I seem to be stealing his camera a lot lately. I’m usually pretty good with wiping the flour, chocolate, and bacon grease off of it so he is none the wiser… but I missed a spot last time. Doh! I have a really hard time photographing chocolate. My gosh, tests my patience every single time!

I have been following your blog for a few months now and I just wanted to say how amazing your blog is! You update practically every day, are super healthy but not too restrictive, and you are CREATIVE, which I totally love!
