Happy New Year’s Eve! Had it not been for Kevin, I would have completely missed ringing in the New Year. I had it in my head that December 31st was tomorrow, not today. Kevin came down to the kitchen a couple of hours ago and said ‘uh, Leanne? Today is New Year’s Eve, not tomorrow’ I kind of just gave him this sad looking face and looked down at the floor. I don’t know where my head was at with that one, but hope that it isn’t a sign of what’s to come in 2012. 2011 has brought with it a whirlwind of challenges, successes, unexpected projects, and loads upon loads of recipes; 253 to be exact. That’s a lot of whole food, gluten-free, sugar-reduced, dairy-free, grain-free, sometimes vegan eating! And, from what I can sum up from the top 12 recipes of the year, a whole lot of healthy treats and pumpkin were consumed, too. Here are the top 12 recipes, according to you!

12) Layered Maple Oat ‘n Apple Dessert Jars

I remember preparing these jars as a treat to myself for my 25th birthday. I was so excited when the recipe actually worked!

11) Sleepy Banana Muffin Smoothie

There was a period this year where all I had for breakfast for months was this exact recipe. No changes needed!

10) Rich Chocolate Quinoa Cake with Vanilla Buttercream Frosting

My dad really enjoyed this quinoa based chocolate cake for his birthday. The best part was, he had no clue what was in it!

9) Overnight Banana Almond Pudding

Banana almond pudding is still one of my favorite breakfasts. It’s gooey and warm, sweet, and filling.

These salmon cakes were the only entrée that made it in the top 12 and even into the top 30! Guessing you guys like your sweet treats + breakfasts more than savory dishes. (I’m so with you on that one!)

7) No Bake Pumpkin Tarts

Of all the fancy desserts I’ve made during the holidays, my family unanimously agreed that these simple no bake tarts were their favorite. Lesson – you don’t slave over a hot stove for hours when you want to impress your guests!

6) Sleepy Cookie Dough Verrines

These verries are made up of strawberry cheesecake and chocolate chip cookie dough layers.

5) 5 minute Strawberry Quinoa Flake Bake

A breakfast made in under 5 minutes is the breakfast for me!

I dreamed up this recipe in the pool during a really hard session. I wish I could say that I zone out while I’m pushing it really hard, but I just end up thinking about what food I’m going to enjoy when I get home.

3) Pumpkin Spice Smoothie

Creating a pumpkin based smoothie opened up a whole other world for me – adding squashes and other vegetables to my smoothies!

I prepared this recipe when I was feeling defeated by my training program, discouraged by my knee injury, and feeling overwhelmed with stuff. It wasn’t soon after enjoying one of these cakes that I decided to write down all of my goals for 2011 and pull myself out of the slump! Seemed like it was just the perfect recipe to get myself going! Here’s to a 2012 filled with just as many tasty treats and; as promised, more green smoothies! Have a safe and joyous evening ;)
