Happy Tummy Fruit Salad with Ginger Mint Glaze

Summer gets me in the mood to sit outside on a picnic bench and enjoy a bowlful of the freshest in-season fruits. Unfortunately for us Calgarians, it hasn’t exactly been warm this summer. But, just because the weather stinks doesn’t mean I can’t eat like it’s hot outside… while wearing my thick fall fleece and long johns. I wish I was kidding. There were a couple hours of warm weather over the weekend, so I nabbed a couple shots and posted them on Instagram. If anything, it’s helped me remember what summer is supposed to feel like… *sigh* For this salad, I wanted something that was flavorful, easy on the digestive tract, and slightly warming. I love eating fresh fruit in the morning, but find it can be a bit harsh on my digestion at times. Allowing a salad like this to “marinade” overnight eliminates some of the harshness. Also, filling it with digestive healing herbs like ginger and mint, and fiber rich berries didn’t hurt the cause either!
Happy Tummy Fruit Salad with Ginger Mint Glaze

Each ingredient in this salad, contributes to a happy and healthy digestive tract. Your digestion will be singing with each spoonful.
Ingredients
  • 2 pears, cubed
  • 2 nectarines, cubed
  • 2 cups strawberries, hulled and sliced
  • ½ cup blackberries
  • ¼ cup raspberries
Ginger mint glaze
  • ¼ cup unpasteurized honey *see note
  • 4 fresh mint leaves, chopped [1 tablespoon chopped]
  • 2 tablespoon lemon juice
  • 1 tablespoon grated fresh ginger root
  • ⅛ teaspoon almond extract
Topping
  • ¼ cup slivered or sliced almonds, chopped
Instructions
  1. Place all salad ingredients in a large bowl.
  2. Combine glaze ingredients in a small bowl, and drizzle over the salad.
  3. Sprinkle with almonds.
  4. Cover and chill for at least 2 hours or overnight before serving.
Notes
To make vegan, replace honey with date syrup.

So, if you have a meat eating, white sugar worshiping partner at home, they may actually like this salad. Bonus points for me, but less salad for my breakfast.
