Sweet Strawberry Ice Cream + Chocolate Sauce

I’m happy to report that I completed everything on my to do list, except for the photography stroll I had planned for the afternoon. I have a good excuse though. The minute I walked outside with camera in hand, it started snowing. Snow + Kevin’s DSLR = Leanne in a lot of trouble if something bad happens. So, I went inside and made mac n’ cheese. :D Kevin came home a couple hours later with a hunger in his belly that could only be cured by a cool treat [or so he claimed!]. hmm… cool treat… Popsicles? “Milk” shake? Carob cluster? [I had one left, so I was hoping he wasn’t going to want a cluster, but I had to mention it] Ice cream? His face lit up at those two magical words. Ice cream it was. Best part? You don’t need an ice cream maker to get the job done, it’s vegan, and it’s less than $1.50/serving! woot! I love ice cream but hate all the junk ingredients in the conventional stuff:

Butyraldehyde [nut flavor aka the main ingredient in rubber cement], Diethylglycol [a chemical used instead of egg yolks], Ethyl Acetate [pineapple flavor aka leather cleaner], Piperonal [vanilla flavor aka used to kill lice] , Aldehydec-17 [cherry flavor aka dye used in the manufacturing of rubber], Amylacetate [banana flavor aka an oil pain solvent]

Not to mention:

Corn syrup, Milk solids, Glucose/Fructose, Whey, Gums, Polysorbate

I'm ready!
There are some great organic or coconut based ice creams out there, I just can’t justify spending $9 for <16oz. I’ll stick to my homemade, affordable, and healthy-as-can-be ice cream, thanks!
Petite and Sweet Strawberry Ice Cream

Enjoy coconut ice cream at the fraction of the cost of the store bought stuff. Best part is, you don’t even need an ice cream maker! This sweet dessert is packed with strawberry flavor with just a hint of coconut and best enjoyed with a spoonful of chocolate sauce.
Ingredients
  • 1 16 oz. can of lite coconut milk
  • 1 cup strawberries
  • ½ teaspoon pure vanilla extract
  • pinch white stevia*
Optional toppings
  • chocolate sauce (below), coconut, walnuts, almonds, dried fruit, flax…
Instructions
  1. Combine all ingredients in blender until smooth.
  2. Pour into 2 freezer safe bowls and place in the freezer for at total of 1.5-2 hours, removing every 30 minutes to whisk so that it doesn’t set into an ice cube.
  3. When it gets to a soft serve ice cream consistency it’s done!

Chocolate Sauce

Sugar-free chocolate sauce, best with a bowl of ice-cream!
Ingredients
  • 2 tablespoon full fat coconut cream – use the thick cream from the top of the can
  • 2 teaspoon cacao powder
  • 1 teaspoon coconut oil
  • pinch white stevia
Instructions
  1. ombine all ingredients in a small bowl and pour over top ice cream
Notes
If you don’t like stevia, replace with ½ teaspoon agave nectar or other sweetener

I had a dream about my new ice cream maker last night. I put my morning smoothie in it and had ice cream for breakfast. You better believe that’ll be one of the first things I do with it. I just have to figure out how to make an almond flour cone. Oh, it will be done my friends. What ice cream flavor is your favorite? Are you an ice cream + cone person? Or a ice cream + cup? What was your favorite way to eat ice cream when you were growing up? My favorite combined Dad’s oatmeal cookies + vanilla ice cream = ice cream sandwiches. Delicious!
