
I’ve become very fond of King Soba buckwheat noodles (gluten free!). They’re ready in 6 minutes, high in fiber, and a great alternative to rice noodles. I’ve recommended these noodles as a replacement to Ichiban for all those addicts out there.
Ingredients
| 1 bundle | king soba 100% buckwheat noodles |
| 2 Tbsp | coconut oil |
| 2 | cloves garlic, minced |
| 1 | red pepper, chopped and divided in 2 |
| ½ | zucchini, chopped and divided in 2 |
| Handful | green beans (fresh), chopped and divided in 2 |
| ½ bunch | kale, chopped and divided in 2 |
Directions
- Cook noodles according to packaging, meanwhile;
- Heat coconut oil on medium heat in saucepan
- Add minced garlic, cook until fragrant
- Add half of chopped vegetables
- Cook for 2 minutes
- Add remaining vegetables and cooked noodles
- Stir and serve immediately
